Have fun in the kitchen! Losing weight doesn’t mean eating food you don’t enjoy.
Here is a perfect dish and you are going to love it. It is one of those dishes that doesn’t need a lot of ingredients to pull it together.
Onion, eggplant and cherry tomatoes are the main ingredients. I have used fresh herbs but it is fine to use dried herbs if you wish.
All you need then is a bottle of tomato passata, liquid stock (optional) and some grated cheese.
Throw it all together and you have a yummy meal that can be eaten on its own or use as your vegetable serve along side pan fried chicken.
Sun Dried Tomato Chicken Casserole Bake
Are you looking for a quick and easy meal you can whip up for the family in under 20 minutes?
I made this yummy Sun Dried Tomato Chicken Casserole Bake the other day and it was a real winner.
Everyone gave it the thumbs up!
Fiery Chicken Taco
Do you love Mexican food?
This is the first time I made Fiery Habinero Spicy Chicken.
I used turkey mince and added in grated carrot and diced onion.
Instead of using the traditional taco shells I used the leaves from the ice berg lettuce and made them into cups.
You can then fill with your favourite toppings like diced tomato, cheese, sour cream, avocado etc
Warning these are very spicy… and very delicious.
Beef & Cabbage Curry
Whether it is a cold winters night or you have a large family to feed this is the one to put on the menu list expecially if your $$$ is a little low…
You can change this recipe up many ways by altering the type of mince. I personally use pork & veal combination or turkey mince. But it will not matter which one as it is delicious either way.
BTW did I mention it tastes even better as left overs and eaten the next day!
I have been using this recipe for over 25 years and this is one of my favourite go to meals expecially if there are lots of people turning up for dinner. Plus a mince meal often goes further and you can beef it out by adding in the veggies.

Buttery Garlic Herb Chicken
This meal will have everyone coming back for seconds!
All you need is zucchini, mushrooms and a handful of cherry tomatoes… toss in a few herbs and it only takes minutes to make.
I love this meal expecially when I am short on time, it only takes minutes to make and is really tasty.
Dinner is served.
Chicken and Mushroom Risotto
I am going to let you in on a little secret… ssshhhhh
You know how risotto is made traditionally with rice, well I gave this dish a go and traded out the rice. I have to say you will not even notice the difference.
The first time I made this I used frozen cauliflower and squeezed out the water and in this recipe I used fresh grated cauliflower. Have to say out of the two options I enjoyed the recipe with the frozen cauliflower.
I made this up for family dinner one night and my mum’s partner could not stop raving about it and mentioned more than once he loved the dish. (He actually thought he was eating rice!)
When they got home he kept saying that risotto dinner was delicious and mum said “you do know it was not rice and Jo used cauliflower.” He didn’t believe her 🙂
I know when I am on a winner when everyone at the dinner table gives it the thumbs up… it means it is a keeper.
You can make this dish with either zucchini or eggplant or both.
When I whipped up this meal I used both but I feel it is easier using the eggplant as they are larger and wider to work with and I find it harder to get larger zucchinis.
Enjoy this dish either on its own or use it as a side serve to accompany with any meat of your choice.
Dinner is served. Delicious!
Lemon Mousse Cheesecake
If you are looking for a little snack that you can keep in the fridge and pull out for dessert after dinner then this is the one to make.
It is nice and simple… did it say it tastes delicious!
You don’t even have to cook it and you can make this in under 10 minutes.

Berry Delicious Cream Cheese Cake

When I first met this beautiful young lady, she sat across from me quite as a mouse, chewing her finger nails.
Paige Cheeseman was feeling embarrassed and she was struggling to even look me in the face as I was talking (lucky I have had teenagers and didn’t take this personally ). I could feel she didn’t want to be in my office at all… but she wanted to lose weight.
She wore clothes that covered up her body and was a little grumpy… fast forward 4 weeks and the girl who rocked on into my office had a huge smile on her face and wearing a crop top!
Now we all know 18 year old’s are not the best cooks in the kitchen yet and they can be a little picky as well. But I think we have a little master chef in the creation… okay, maybe not a master chef but I know she knows how to make some simple and easy meals that work for her.
